What You Need:

  • 8 oz asparagus
  • 1/4-1/2 cup water
  • 1 tbsp fresh minced ginger root
  • 1 clove minced garlic
  • lemon zest
  • salt & pepper to taste

How to make it:

  1. Snap ends off of asparagus spears and discard.
  2. Snap spears into 2-3 pieces.
  3. Add a little water, garlic, and ginger to pan heated medium-high and cook 2-3 minutes.
  4. Add asparagus and rest of water.
  5. Bring to boil for 5 minutes.
  6. Remove asparagus and top with lemon zest, salt, and pepper.

What You Need:

  • 6 oz Alaskan pink salmon (canned salmon)
  • 1/2 small onion, diced
  • 1 egg, beaten
  • 1 1/2 tbsp butter, melted
  • 1/2 tsp pepper

How to make it:

  1. Preheat oven to 375 degrees.
  2. Combine salmon, egg, onion, butter, and pepper in bowl with hands. 
  3. Form into 4 patties and place on parchment lined baking sheet.
  4. Bake for 10 minutes, turning once, or until golden brown on both sides.

Layer 8Chocolate Oatmeal Cookies

What You Need:

  • 3 bananas, mashed
  • 2 cups oatmeal
  • 1/4 cup peanut butter or almond butter
  • 1/3 cup unsweetened applesauce
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp vanilla
  • 1/2 cup Lily’s chocolate chips
How to make it:

  1. Mix all ingredients together in bowl.
  2. Place in refrigerator for 1/2 hour.
  3. Preheat oven to 350 degrees.
  4. Roll into 24 balls and place on parchment lined baking sheet.
  5. Bake for 10-12 minutes.
